Vanilla cupcake recipe

We love to do a spot of baking in our house, and our favourite is cakes! So I thought I would share our favourite recipe. Its really easy and you can get the kids involved to.

For vanilla cupcakes with a butter icing finish you will need...

Self raising flour
Castor Sugar
Margarine
Butter
Eggs
Vanilla essence
Icing sugar
milk
cup cake cases
cupcake tin
electric mixer
tea and table spoons
wooden spoon
grater
piping bag
a small bar of galaxy chocolate (or plain chocolate of your choice)
milky buttons
weighing scales
wire cooling rack

To start pre heat the oven at 170c

measure out...
6oz of self raiding flour
6oz of castor sugar
6oz of margarine
3 medium eggs
place the cupcake cases into the cupcake tin ready. (this will make approximately 14 cupcakes)

Mix together the sugar and margarine until light and fluffy using the electric mixer. Add an egg one at a time and mixing in between. Sift the flour in gradually and add 1 tea spoon of vanilla essence. Mix until a smooth mixture is formed.

Using a table spoon scoop the mixture evenly into the cupcake cases until all the mixture is used. Place on the middle shelf of the oven for 20 minutes. After this time check the cakes are done by sticking a knife into the centre of the cake. If the mixture is still runny place the cakes back into the oven for a further few minutes.

Once cooked. place on a cooling rack to cool.

For the butter icing measure out

10oz of icing sugar
30z of butter
1 tea spoon of vanilla essence
1 table spoon of milk

Add to a bowl and cream together the mixture using a wooden spoon until all of the icing sugar has been absorbed. Then using the electric mixture on a medium setting mix together
until a white fluffy texture has been formed.

Once the cakes are cool. Place the butter icing into a piping bag, start on the edge of the cake leaving a slight gap so that some of the sponge is visible and pipe in a circular clockwise motion until you reach the centre of the cake. Grate some chocolate over the butter icing and place a milk chocolate button in the centre for decoration. (you can substitute the chocolate and chocolate buttons for something else if you wish)



Make a drink of you choosing, sit down, relax and enjoy your cakes!
